Fresh crunchy potato salad without mayo

For this crisp salad you need for 4 people a good kilo of hard-boiled potatoes, well cleaned and not too soft cooked.

Simmer for only 15 minutes, then they do not decay so much, let cool slightly, peel and slice.

For the marinade you need

  • 1 chopped onion
  • about 1/8 L meat or vegetable broth
  • Salt, pepper, a little maple syrup (or honey or sugar)
  • 2-3 heaped tsp mustard
  • 3 tablespoons vinegar
  • 5 tablespoons of oil (in this case rather germ oil instead of olive oil)
  • At the end, fresh finely-ground herbs are added, and chives, dill and / or parsley are perfect for this.

preparation

  1. The chopped onion is first boiled in the broth.
  2. Stir in all ingredients, pour over the potatoes while still warm and then let it cool in and let it cool.
  3. Cover with a large plate (or lid) and stir occasionally.
  4. Shortly before serving, the herbs are added.
  5. In the potato salad you can also plan fine vegetables like cucumber or endive or cut into small strips.
  6. The salad is a wonderful summer accompaniment to all grilled and is not as heavy in the stomach, as his much more famous brother with mayonnaise.
