Important tips for a good yeast dough

If you follow these simple tips that I have received from a pastry chef, then this dough succeeds in any case. I have tested this very often, and it always works well. The ingredients are sufficient for about 450 g sweet yeast dough, which is needed for a normal baking sheet.

  • 25 g of sugar
  • ½ tbsp liquid honey
  • 1 egg
  • 40 g soft butter
  • 1 tsp salt

  • 250 g flour
  • 9 g fresh yeast

preparation

  1. All the ingredients except the flour and the yeast are put in a bowl and mixed. Milk, eggs and yeast can be cool, only the butter must be room warm!
  2. The flour is sifted into the mixing bowl and then crumbled into the yeast.
  3. Then add the remaining ingredients from the other bowl and knead with the kneading hook of the hand mixer on a small scale for about 10 minutes, until everything is well mixed.
  4. Then it is then kneaded for about 2-5 minutes at a higher level until the dough is smooth and dull shiny and dissolves well from the bowl edge. You may need to add some milk or flour.
  5. Now cover the bowl with foil and leave the dough for at least one hour in a warm place until its volume has approximately doubled. You can also leave the dough in the fridge overnight.
  6. Then the dough is kneaded vigorously on a lightly floured work surface with his hands, then he is ready for baking.

With this yeast dough you can also bake various other sweet pastries such as milk rolls, raisin or fruit bread, Hefezöpfe or? Wreaths, pretzels, snails, Tarten etc.
