Lentil soup with mince dumplings and vegetables

ingredients
- 500 g minced meat (beef, pork or mixed hack)
- 300 g of lenses
- 140 g of potatoes
- 20 g of butter
- Grow through 90 g of bacon
- 1/2 L of water
- 1/2 L chicken broth
- 1 bunch of soup vegetables
- 3 onions
- 3 bay leaves
- 4 juniper berries
- Pinch of pepper and pinch of salt

- Lenses in one ½ Add cold water to a liter of cold water for 45 minutes.
- ½ Add 1 liter of chicken broth to a pot and let it warm.
- Wash the greens, chop and add to the chicken broth. Add the 3 bay leaves, a little pepper, 4 juniper berries and a quartered onion to the chicken broth. Boil the chicken stock and season with salt. Then put back on a small scale and simmer the vegetables for 20 minutes.
- Now put the lens pot with the soaking water at medium level.
- Cut the second onion into small cubes and sauté briefly, then sauté the bacon.
- Mix the minced meat with all ingredients and add the steamed onions.
- Dice the potatoes, then add to the lentil soup and the piece of bacon too.
- Dice the third onion and fry with the 15 g of butter, then add to the lentils and stir once.
- From the boiled vegetables skim off some broth, about 1/4 liter and add to the lentil soup. Let the lentil soup boil briefly and vigorously, then reduce the lentil soup to small and simmer for another 20 minutes.
- Now turn off the lentil soup, but can continue to stand on the hob. Shape the minced meat into small meatballs, boil it in a little broth and add it to the lentil soup. Now again on a small scale for 10 min. simmer gently.
- Then add the lentil soup with salt and the remaining vegetables with the stock in the pot and stir. Now the lentil soup can be served.
Tip: Add fresh slices of bread, just delicious with lentil soup!
