Maghmour - eggplant stew from Lebanon
I would like eggplant Never before and avoid dishes where eggplants are an integral part. But I have no problem with eggplant hiding recipes! This is an eggplant sake recipe for people who do not like eggplants! And the aubergine fans will appreciate it too! :O))
Let's go:
- Dice 2 large aubergines (peel as desired) and sauté in a little olive oil and set aside
- Dice the onions roughly and sauté in a little oil
- one or two chopped chilli pepper
- Crush 4 to 6 cloves of garlic and sauté with 2 tablespoons of tomato paste
- Add 2 cans of drained chickpeas and 2 cans of chopped tomatoes, top up with 500 ml broth and add the aubergines again
- Now it should simmer for about 30 minutes; but always stir well, so nothing burns!
- Finally, season with salt, pepper, cumin and mint
- Spread on plates and serve with a large dollop of sour cream, yoghurt or creme fraiche
It tastes of rice or flatbread and people who refuse a completely vegetarian food, are happy about a few spicy meatballs to it or fried, diced chicken breast fillet.
Oh yes, chickpeas did not like, can replace them with kidney beans or chili beans.
