Mascarpone cream with amaretti

Delicious, fluffy dessert that tastes great when chilled.

Ingredients for 4 servings:

  • 120 g Amaretti (this is the larger variant of Amarettini)
  • 4 tablespoons Amaretto (almond liqueur)
  • 4 eggs, separated
  • 50 g of sugar
  • 220 g mascarpone
  • 50 g almond flakes

preparation

  1. Crumble the amaretti (eg in a transparent bag with rolling pin), place in a bowl, add the almond liqueur, mix well and put aside. Roast the almonds in a frying pan until golden brown and allow to cool.
  2. Stir egg yolks together with the sugar until foamy, then carefully fold in mascarpone and the solid amaretti crumbs. Beat the egg whites until stiff and then lift them under the mascarpone-amaretti mixture.
  3. Fill the cream in 4 dessert bowls and refrigerate for at least 1 hour. Before serving, sprinkle the roasted almond flakes over the cream, and then you can enjoy it!
