No bitter substances in the endive salad

I keep wondering that endive salad should taste bitter.

I always do it this way: I cut the stalk once in the middle, tear the salad apart, remove dark green leaves and wash the halves under running water to remove dirt and possibly snails.

It is important to divide the salad from the root, because the leaf tips contain most bitter substances and are transferred to the whole salad when cutting.


So first cut off about 3cm from the stalk, cut the rest into strips but only as long as the leaves are still light green. Do not use dark green leaves !!!

Rinse the sliced ​​salad lukewarm again in a colander.
