Ingredients for the yeast dough
- 250 g wheat flour (550 or 812)
- 250 g spelled flour 630
- 15 g of baking malt
- 10 g salt
- 15 g lard (or butter)
- 10 g of yeast
- 3 g of sourdough dried
- 1 tsp apple cider vinegar
- 1 tsp honey
- 290 g of water
- Decoration: poppy seeds, sesame seeds, caraway seeds, sunflower seeds, etc. depending on taste
preparation
- Dissolve the yeast in lukewarm water and process with the remaining ingredients to a smooth yeast dough. Be sure to knead for about 10 minutes.
- Do not let the dough go, but divide it into 2 portions, shape each into a rolling pin and divide into approximately 12 equal pieces. Grind the dough pieces round.
- Press the round parts into a damp cloth and dip into the seeds with the moist side.
- Place the dough pieces on a baking sheet lined with baking paper (round or rod-shaped, according to taste) and let stand covered for about 45 minutes.
- Sprinkle the surface of the dough pieces with water and bake at approx. 180 - 200 degrees for approx. 20 minutes.
