Potatoes with spicy tomato vegetables

Here's the vegan recipe for a tasty potato dish that's fried in the oven. The potatoes are served on spicy tomato vegetables. Looks good, is vegetarian.

I think it's delicious as it is. Of course you can extend the dish with grilled meat or fish fillet.

ingredients

For the potatoes:


  • 1 kg of potatoes
  • olive oil
  • salt and pepper

The potatoes are washed, but unpeeled cut into pieces, mixed with a few tablespoons of olive oil, salted and peppered and baked on the baking sheet crispy for 50 minutes at 200 degrees.

For the tomato vegetables:

  • 1 kg of aromatic tomatoes
  • 2 onions
  • 3 garlic cloves, chopped
  • 2 red chili peppers, gutted
  • 3 tbsp olive oil
  • 2 teaspoons paprika powder sweet
  • Salt pepper
  • 1/2 tsp sugar
  • 3 tablespoons tomato paste
  • chopped basil leaves

preparation

  1. The tomatoes are quartered and the seeds are scraped out with a spoon. If you want, you can freeze it for the next tomato soup.
  2. The onion is cut into pieces and sweated with the garlic cloves in oil.
  3. The tomatoes are added and stewed for 5 minutes.
  4. Now the tomato market as well as the spices are mixed. Simmer for another 5 minutes.
  5. The vegetables should still bite and be lumpy.
  6. To serve you take a deep plate, draw tomatoes vegetables on it, the potatoes come in the middle.
  7. Above, the chopped basil is sprinkled over.
