When I recently got a basket of apple quince from nice neighbors, I was very happy about it. How many delicious things can be prepared from it: For example, jam, jelly, liqueur, cognac, cake, tart or baked quinces with Quarkcremefüllung.
First of all, I made jam from the following ingredients. From 1.5 kg of quince, 1 L of water, a little lemon juice, 500 g of gelatin sugar (3: 1) and a little calvados (or rum is certainly also possible) were 6 normal jam jars (450 g) delicious quince jam.
The preparation is simple
- The quince peel must first be cleaned with warm water, preferably with a brush.
- Then I quartered the quinces, removed the core and cut the quarters into small cubes, sprinkled with a little lemon juice and boiled with plenty of 1 liter of water in the pressure cooker for 10 - 15 minutes.
- Then I poured off (and kept) about half of the liquid, added the gelling sugar and crushed everything with the blender.
- Bring to a boil again with the wooden spoon, following the instructions on the packaging, and continue to boil for 3 minutes while stirring.
- Finally, I have a glass of Calvados briefly stirred, the hot mass immediately filled in clean, hot rinsed glasses and sealed with screw lids.
Another tip
From the collected juice I have then prepared quince jelly.
