My recipe for rhubarb compote.

Ingredients and preparation

  1. Diced 1.5 kg of rhubarb, boil with 4 tablespoons of water in a large saucepan.
  2. Add 1 teaspoon soda, stir, simmer for 2-4 minutes.
  3. Turn off the stove, add a handful of raisins and let cool.
  4. Warm with 2-3 tablespoons of coconut flour (binds and sweetened), add ginger and honey to honey and serve with 1 tbsp of mascarpone (each serving).

All ingredients counteract the acidity.

Also good to dry cake and filling for pancakes.

Of course, the compote can also be bound with bananas or flour (must cook).
