Rhubarb sheet cake with sprinkles

Last weekend I did not bake my delicious rhubarb pie with mash and meringue, as it is quite time consuming. That's why I baked this quick cake with rhubarb and crispy crumble, which also tasted very good.
ingredients
For a baking tray of 26 x 38 cm
For the dough:
- 500 g spelled flour
- 1 pck of baking soda
- 200 g brown sugar
- 1 pck of vanilla sugar
- 1 pinch of salt
- 250 g soft butter
- 1 tbsp sunflower oil
- 2 eggs
For covering:
- 800 - 1000 g rhubarb
- 100 g of sugar
- powdered sugar
preparation
- Preheat the oven to 160 degrees.
- Wash the rhubarb, clean it, peel it if necessary and cut into 1 cm pieces, mix with 100 g sugar and leave for about 20 minutes.
- In the meantime prepare one crumbly crumble dough one after the other with all the dough ingredients using the kneading hooks of the hand mixer.
- Press about two-thirds of it on the greased or baking paper sheet as a base, then place the rhubarb pieces on it and sprinkle the remaining dough over it.
- Put the tin on the middle rail in the oven and bake the cake for about 40 minutes.
- Then leave to cool on the baking sheet and dust with powdered sugar before serving, even better serve with a little whipped cream or a scoop of vanilla ice cream.
