Rice pudding with rum raisins

Ingredients for 2 or 3 servings:

  • 70g uncooked pudding rice
  • 600ml whole milk
  • 1 egg
  • pinch of salt
  • 50g brown sugar
  • half tsp vanilla flavor
  • Pinch of cinnamon
  • about 45g of raisins (put in rum for a few hours)

preparation

Cook rice in milk with the pinch of salt until soft for about 20 minutes (stir occasionally).

Stir egg with brown sugar well and stir in a little of the hot rice mixture. Now incorporate this egg mixture with constant stirring in the rice.

Simmer for about 10 minutes with constant stirring on the stove until it has a good bond and is thickened.

Remove rice from the heat, add raisins, vanilla flavor and a little cinnamon.

If you like it rich, you can also replace part of the milk with cream.
