Salmon in the vegetable bed

Take the - clear - fish

about 200g per person

For the vegetable bed we need:


1 fennel (which is very important)
1 vegetable onion
2 tomatoes
2 carrots
1 stick of celery
3 toes of garlic

For the sauce:

vegetable stock
White wine
Creme fraiche or cream
lemon
who likes lemongrass?
something mustard


Let's go:

First, free the fish of any existing bones, a single bone can spoil the enjoyment and the bone becomes a topic of conversation (smile).

Salt and pepper from both sides, add some lemon juice and put aside.


Now we take care of the vegetables:

Cut fennel into small pieces
Halve the onion and then cut into "half" rings
Chop garlic small
Cut carrots into thin slices
Tomatoes into cubes, whoever wants to can skin them beforehand
Cut celery into small pieces

Now everything is cut and prepared, and we can start. Now everything is going very fast.

Add oil in a roasting pan or a large pan. Sauté shortly the onion, then add the garlic, add fennel, celery and carrots, stir well. Pour the wine and broth, season to taste, simmer, simmer the tomatoes after five minutes, simmer again. The vegetables should still have bite. After another five minutes add the cream or creme fraiche and taste the sauce - something is missing, purely.

Now put the fish on the bed of vegetables cover it and let simmer for a few minutes, the fish is cooked, the food is ready.

There is rice or just a baguette to "cook" the sauce. A fresh salad, possibly chicory (mixed with salt, pepper, vinegar, oil, lemon juice, mustard and cream), can not hurt.
