Sauce to stir-fry

Again and again I need a sauce for meat or fish. Have now excavated a recipe from grandma and it works like this:

Peel 3 small potatoes per person, slice large potatoes into slices / pieces.
Sweat the diced onion in a little butter.
Add potatoes, lightly brown.
Add cream with 2 cups (for 12 potatoes / 4pers.)
simmer for about 30 minutes, then the potatoes are cooked.
Season with salt and pepper.
Chives over it, serve. Tastes great!
