Simple yeast raisin braid with success guarantee

So far, I've always struggled with recipes with fresh yeast, but I've always preferred those with dry yeast. But now I've dared to do it again and have baked this wonderful Hefezopf. All I can say is that it's easy to do and that I did a great job right away!

I highly recommend this recipe to anyone who does not dine on yeast dough like me - just give it a try and you'll be surprised by the result just like me!

  • 250 ml of lukewarm milk
  • 75 g of sugar
  • 1 pinch of salt
  • 1 egg
  • 150 g butter
  • 1 cube (42 g) of yeast
  • 600 g of flour
  • about 80 g raisins (like more)
  • brown sugar and almond flakes to sprinkle

preparation

  1. Heat milk, sugar, salt, egg and butter in a pan until the butter has melted, then allow to cool slightly (the temperature must not exceed 40 degrees, otherwise the yeasts will be destroyed!).
  2. Then the yeast is crumbled and dissolved.
  3. Put the flour in the mixing bowl, press a hollow into the middle, pour in the yeast milk and knead everything into a smooth dough (I have taken the dough hooks of the hand mixer, but you can also knead by hand). When the dough separates from the edge of the bowl, the raisins are worked in by hand so that they are not crushed. Now the yeast dough must go for 1 hour in a warm place (best in the oven at about 25-30 degrees).
  4. Thereafter, the oven is preheated to 200 degrees (top / bottom heat).
  5. The dough is divided into 3 equal pieces, these are formed into rolls and a braid is braided. Put it on a greased tray or paper backed with baking paper or foil, brush it with a little milk and sprinkle brown sugar (better you take some sugar, but I did not have that) and almonds over it.
  6. Now it's off to the preheated oven, where the braid is baked golden brown for about 35 minutes. If it gets too dark, it must be covered before the end of the baking time.
