Sofrito with lemon potatoes from Greece

This recipe comes from the Greek island of Corfu. Unfortunately, it has not yet appeared on the menu of Greek restaurants. We ate the recipe on vacation and just loved it. The recipe I have the mother of my daughter's best friend, who happens to be Greek.

Peel and quarter a kilo of potatoes. Wash off 2 organic lemons hot and slice. Mix the potatoes with lemon slices, 2 tablespoons of oil, 1 tablespoon of dried oregano and salt and pepper and bake in the oven for three quarters of an hour. Salt, pepper and dust with flour. Sauté each side in a little oil for 2 minutes. Slice 4 cloves of garlic, add 2 bay leaves. deglaze with 300 ml of dry white wine and pour in 300 ml broth. Cook on low heat for 10 minutes. Lightly bind and season the sauce. Serve the steaks with the lemon potatoes and sauce.

This fits a Greek peasant salad and Tsatski. A little warning on the edge: after 10 minutes of cooking at low heat, the steaks are of course not yet, but medium. If you do not like that, you should extend the cooking time a bit.
