Strammer Max with fried egg

Here is my version of the Stromm Max.

Ingredients for 2 persons

  • 6 eggs size L
  • 200 g of cooked ham
  • margarine
  • Salt, pepper, paprika, whether sweet or spicy
  • 1 small onion
  • 1 pan with lid

preparation

  1. Peel the onion and dice it generously, quartering all the slices of ham. Heat some margarine in your pan and spread the slices of ham in it, spreading the onion pieces over it. Now let the whole thing fry a bit crisp, and please now and then please. Careful, the ham will hop after a while and spritz something. If this happens, cover it up, but not quite.
  2. If it's crispy enough for you, take the pan off the plate for a few seconds, wait 10 seconds for the ham to settle down and then beat the eggs over it. Season now, just as if you are making fried eggs, with salt, pepper and paprika. Put the pan back on the plate, set it to the lowest level, put the lid back on it and wait until the egg is firm or, depending on how you like it, not so firmly. That's it, easy, fast and delicious.
  3. You can serve the whole thing pure or as I do it on slices of bread. 2 slices of bread on the plate, the strained Max over it and some of the cooking fat, done: o)
