Striezel bake yourself (Hefezopf) | TheFruitAndFlowerBasket TV

My husband loves to eat a yeast cake for breakfast. 365 days a year! If I want to give him a special treat, I bake him a fresh Hefezopf. Mostly this is after the day I baked this walnut bread. Because this leaves about the amount of yeast that I need for this pastry.

ingredients

  • 250 g of plain wheat flour
  • 125 ml of milk
  • 30 g of granulated sugar
  • 15 g of yeast
  • 30 g butter
  • 1 whole egg
  • a little salt and vanilla sugar and lemon powder

preparation

  1. The milk is slowly heated with crumbled yeast, sugar, butter, vanilla sugar and lemon powder with minimal heat in a small saucepan. Once the butter starts to melt, remove from the heat. The milk may only be lukewarm, otherwise the yeast bacteria will be destroyed. It is also important to use only fresh yeast. If this is already older, the Backfreudigkeit this suffers very quickly underneath and the pastry is not right on.
  2. Now by hand or in the mixer, whip up all the ingredients until the dough comes off the bowl.
  3. Now in a warm place without a train :-) let covered for 20 minutes with a tea towel.
  4. The dough has now risen beautifully and is cut into 3 equal parts. The pieces are formed into elongated sausages and the doughs are compressed and thus joined.
  5. Everything now comes on a baking sheet covered with baking paper. When weaving, take the right part alternately once and place it in the middle. Then the left part and put it in the middle. So you continue until the Hefezopf is braided. Squeeze the ends well so they do not bake when baking.
  6. Cover it again and let it rest for another 20 minutes in a warm place and then preheat the oven with top and bottom heat at 180 degrees.
  7. Spread the yeast cake with milk or sprinkled egg. Then it is baked for about 25 minutes golden brown.

Approximately 4 tablespoons of water are poured onto the bottom of the oven and the oven door is closed again immediately. The steam helps the Hefezopf to a better baking result. Alternatively, pre-heat a refractory bowl of water or spray water into the oven with a spray bottle.

In a container by pushing the cut ends he keeps fresh for 2 days. With us such a Striezl survives a maximum of 2 days. If you want to bake this Hefezopf for at least 4 people, it is best to double that amount.
