Sauce Hollandaise: Simply prepare with the blender

Asparagus time is here. Of course, this includes the hollandaise sauce. I tried to make them myself a few times. Honestly, it was always in the "pants"! I recently found a recipe and tried it right away, and it worked! :)

  • 2 tablespoons white wine
  • 4 yolks
  • 50 g of cream
  • a little lemon juice
  • 150 g butter

preparation

  1. Put white wine, egg yolks, cream and lemon juice in a tall container.
  2. Melt 150 g of butter, allow to cool slightly and pour into the jar.
  3. Put the blender on the bottom of the container, switch it on and slowly pull it from the bottom to the top. Season with salt and pepper. If the sauce has become too thick, dilute with a little water. If it is too thin, add a little more butter.
  4. Now put the sauce in a saucepan. IMPORTANT! WARM UP SLOWLY on the smallest flame! Keep stirring! Otherwise she might collapse!
  5. But if something like that happened (first time with me too), you can do the following. Beat 1 egg yolk and 2 tablespoons of very cold water in a bowl. Slowly stir the curd sauce in the bowl and serve immediately.
