Trüffelmayonaise

Here comes a recipe for home-made mayo with truffle flavor - is quite easy to make, preferably as soon as possible before eating.

You need:

  • 175 ml sunflower oil
  • 25 ml truffle oil (available in the delicatessen)
  • 3 yolks (as fresh as possible)
  • 1-2 tsp spicy mustard (Dijon best)
  • 1-2 tablespoons of lemon juice (freshly squeezed)
  • salt
  • white pepper (from the mill)

And this is how it is done:

Put the egg yolk in a bowl with a pinch of salt, 1 tablespoon of lemon juice and the mustard and whip well with the whisk or hand mixer.

Add the oil together in a measuring cup and stir only dropwise (important!) Until the mass starts to emulsify.

Then add the remaining oil in a thin stream, stirring constantly, until the mayo has a nice creamy consistency. Season again with salt, pepper and lemon juice - done.

Tastes delicious and makes, for example from hand-carved fried potato sticks 'Pommes de luxe' ;-)
