Since I do not like lean quark, I like to use 20% quark and mix herbal cream cheese as needed. For my three variants, I took 250 g quark each.


Version 1:

It's about the classic, a very simple herb quark. For this I use chopped parsley, pimpinelle, garlic grass, lemon thyme, celery, dill, fennel herb, a little mint, chives cut into small rolls, garlic at will, salt, pepper and a hint of lemon juice or biocitron abrasion and some sugar. I replaced some curd cheese with herbal cream cheese.

Variant 2:

Quark with rocket. For this I took my rocket from the balcony, an exotic variety Wassabi rocket for the most part. Overall, a good handful cut into fine strips and 2 teaspoons thyme honey. The garden cress can grow even after sowing higher and does not have to be harvested like a virgin, it still tastes good and you have more of it.

Rosemary, oregano and tarragon do not go well with my herb quark, because they taste a bit tart.
