Bacon dumpling soup

Bacon dumpling soup: Especially tasty for the cold days!

Ingredients for 4 servings:

  • 8 rolls from the day before or dumpling bread
  • 1 bunch of parsley
  • 1 big onion
  • 200 g of bacon
  • Salt pepper
  • about 800 ml broth
  • 250 ml of milk
  • possibly breadcrumbs
  • 3 eggs

preparation

  1. First cut the rolls into small pieces and place in a bowl.
  2. Then warm the milk so that it is lukewarm and add to the rolls, leave to swell for about 30 minutes.
  3. Meanwhile bacon and onions dice and fry in fat.
  4. Chop parsley.
  5. Add bacon, onions, eggs and parsley to the rolls and knead well. If the dough is too sticky, add a few breadcrumbs.
  6. Heat broth.
  7. Form dumplings into small dumplings of about 5 cm in size and place in the boiling broth.
  8. Approximately Simmer for 20-25 minutes.
