Baked meat cheese toast with mushrooms and fried egg

If a few remaining slices of toast are pushed from one corner to the other, a packet of Leberkäse should be processed and if then a rest of vegetables, such as here. If, for example, you have a few spoonfuls of mushrooms left over from lunch, you can easily make a baked meat toast with fried eggs:
ingredients
- 4 slices of meatloaf
- 2 slices of toast (best american toast because of size)
- 2 eggs
- 4 slices of cheese of your choice
- mushrooms
- 4 cherry tomatoes
- chilli flakes
- Salt, possibly pepper
- plenty of mustard
- a little oil for the pan
- parsley
preparation
- Season the meatloaf (I prefer the poultry version) with chilli flakes and a little salt and fry in a little oil from both sides and remove from the pan.
- If there are no vegetables left over (mushrooms left over from lunch, asparagus, for example, also goes well with them), fry mushrooms in the same pan, season with pepper and salt.
- Toast slices toast and spread generously with mustard. Now roast 2 eggs.
- In the meantime, place 2 slices of Leberkäse on a toast slice.
- Put the mushrooms on the toast. Cover with 2 slices of cheese.
- Divide the tomatoes and spread on the cheese and heat briefly in the microwave until the cheese has run dry.
- Once this is the case, take out toast, put a fried egg on each, sprinkle a dash of chili on the egg yolk and garnish with parsley.
