Carrot cake / cake without added flour or fat - Easter cake

The recipe I got as a tip and baked yesterday - heavenly delicious and juicy!
In addition, I found it, because it consists of the main food of the Easter Bunny, especially good as Easter cake.
ingredients
- 300 g of finely grated carrots (or carrots, as you might call it)
- 300 g of finely ground almonds
- 150 g of sugar
- 5 separate eggs
- 1 vanilla pod
- 1/2 p. Baking powder
- Bitter almond flavor to taste (I love it)
preparation
- Mix sugar and egg yolks with the vanilla pod frothy.
- Add carrots, baking powder and almonds as well.
- Beat the egg whites very stiff, lift them carefully under the carrot dough and bake immediately.
- Baking time about 45-50 minutes at 175 ° C - 180 ° C.
- Maybe with a frosting coat (I personally did not like that) and decorate with marzipan and food coloring (also beetroot juice, saffron, spinach juice or the like) shaped carrots or bunny.
- The cake is incredibly juicy by the carrots, without tasting of carrots!
- When shaping the decoration you can also include the children or grandchildren, make the short fun (even I was proud of my works).
