Grünkohle stew (vegan)

This very tasty green cabbage stew can be served without hesitation if meat is not desired or tolerated. He's not as fat-laden as the classic kale here in the north. For me, who never liked kale, a very good alternative. That's the way kale tastes.
ingredients
- ½ tsp chilli flakes
- 1 tbsp green curry paste
- 2 onions
- 2 tablespoons rapeseed oil
- 400 g TK curly kale natural
- Salt pepper
- 400 ml coconut milk (1 can)
- 400 ml vegetable broth
- 2 carrots medium in size
- 1 medium-sized sweetmeat (sweet potato)
- 1 piece of ginger fresh, walnut big
- about 50 grams of red lentils
- 1 tsp raw sugar
preparation
- Clean the onions and cut into half rings.
- Put oil in a saucepan and let it heat up, then fry the onions with curry paste and chili.
- Deglaze with the broth and add the kale, as well as the coconut milk.
- Bring everything to boil and then add the diced carrots and the diced potatoes. After 5 minutes, add the lentils and raw sugar and simmer for about 15 minutes.
Instead of the curry paste you can also take about 2 teaspoons curry powder, but then it does not taste as good as with the paste.
This stew is good enough for 4 people, makes you full and warms properly. You can also use the red curry paste, but be careful, it's really hot.
