Homemade potato dumplings

For this I need the following ingredients:

Potatoes, flour, potato flour, salt and toast.
A potato press and a pot.

If I want to make potato dumplings, I prepare the potatoes and croutons the day before. Grandma told me so, so it's done that way. ;-)


I take about 8-10 potatoes. Depending on how tall or short they are. I let these boil as boiled potatoes nice and soft.

In the meantime, I cut a toast into small cubes and fry them in a little oil golden yellow. Seasoned with salt, they are a little spicier.

If the potatoes are soft, I pour them off and process them still hot. I peel it and squeeze it through a potato press. I always put the potatoes in a nice big bowl. When all the potatoes have been squeezed, I place the bowl covered on the windowsill until the next day. (There it takes me the least space).


The next day I grab the bowl. Since the potatoes have stayed pretty well evenly in the bowl, I can now share the "mass". I always do it by pressing a cross into the ground and distributing a part to the rest of the mass. In this one, empty part, I now give flour (I always make it just as high as the mass of potatoes, so just fill up the empty part) and add 2-3 tablespoons of potato flour. Season with salt and knead well. If the mass is still very moist, then add some flour to it. It should come out a nice, solid, even mass.

Then I start to shape the potatoes. I take some dough, put 1-2 cubes of toast in and form a dumpling. I then roll it again in flour and put it on a plate. So I do it until the dough is used up.

Then I set up a large pot of salt water, let it boil and when the water boils, I put my dumplings in. Then I turn down the heat until the dumplings boil only slightly. Then I leave them for 15-20 minutes without a lid. If the dumplings are good, swim on the surface. Then just take out and enjoy.

This fits e.g. Goulash with red cabbage.

Have fun cooking. If it does not work right away, do not despair, it does not always work for me. It is still no master of the sky fallen .. :-)
