Homemade potato dumplings are already "rolling" / preparing in the morning

I always make my own potato dumplings. But when Christmas is coming, and you have to make a few dumplings, I've gotten a great tip from an older lady.

She prepares the dumpling dough in the morning. Then she takes a flat plate and puts a damp tea towel on it. Then the dumplings are rolled, placed on the towel. Towel over and hit it in the fridge. At lunchtime you do not need to turn the finished dumplings anymore, but you can pour them directly into the boiling water.
