Jollof Reis - African rice dish

ingredients
- 500 g rice best parboiled
- 500 g chicken or beef
- 8 tomatoes
- 70 g of tomato paste
- 2 peppers best red
- 2 onions
- 1 bouillon cube
- Approximately 150 ml of oil
- 1/2 teaspoon pepper and a little chilli (who likes it spicy)
preparation
- Rub the meat with salt and pepper and cut into pieces, may be slightly larger.
- Put rice on top and chew cubed peppers and 5 tomatoes together in a blender.
- Dilute the tomato paste with a cup of water and stir well.
- Heat the oil in a pan and fry the meat well, remove and keep warm.
- Keep the oil on a high flame, add the onion and immediately add the mixed tomato paste, stir for a few minutes and then add the paprika and tomato puree.
- Boil for about 5 minutes over low heat and then add the other 3 fresh and chopped tomatoes, then add the stock cubes, chilli and salt.
- Drain the rice and when well drained, add to the sauce and mix well, infuse for about 5 minutes.
- Arrange the rice on the plate and put the meat on the rice and serve.
