Jollof Reis - African rice dish

ingredients

  • 500 g rice best parboiled
  • 500 g chicken or beef
  • 8 tomatoes
  • 70 g of tomato paste
  • 2 peppers best red
  • 2 onions
  • 1 bouillon cube
  • Approximately 150 ml of oil
  • 1/2 teaspoon pepper and a little chilli (who likes it spicy)

preparation

  1. Rub the meat with salt and pepper and cut into pieces, may be slightly larger.
  2. Put rice on top and chew cubed peppers and 5 tomatoes together in a blender.
  3. Dilute the tomato paste with a cup of water and stir well.
  4. Heat the oil in a pan and fry the meat well, remove and keep warm.
  5. Keep the oil on a high flame, add the onion and immediately add the mixed tomato paste, stir for a few minutes and then add the paprika and tomato puree.
  6. Boil for about 5 minutes over low heat and then add the other 3 fresh and chopped tomatoes, then add the stock cubes, chilli and salt.
  7. Drain the rice and when well drained, add to the sauce and mix well, infuse for about 5 minutes.
  8. Arrange the rice on the plate and put the meat on the rice and serve.
