Juice goulash with pasta or potatoes

A beef goulash is not cooked in a few minutes. Because only by the right attention and enough time, the delicately cooked goulash and especially the legendary juice. If you want to prepare my Berlin juice goulash yourself, you should take the right time. The following step by step description will guide you through the cooking process. The preparation time is at least about 220 minutes or up to 300 minutes, depending on the meat quality!

ingredients

  • 600 g of beef
  • 5 onions normal size
  • 3 toes of garlic
  • 1 carrot in small cubes
  • 1 slice of brown bread (brown bread) in cubes
  • 60 g of butter lard
  • 1/2 L chicken broth or beef broth, of your choice, no grained!
  • 100 ml of red wine
  • 1 tablespoon tomato paste
  • 2 tablespoons wine vinegar
  • 1 tsp marjoram
  • 1 tsp caraway, freshly ground
  • 1/2 tbsp paprika powder, sweet
  • 1/2 tsp thyme

preparation

  1. Cut the meat first into 2 cm thick slices and then into 2 cm cubes.
  2. Peel the onions, cut in half and cut into coarse cubes.
  3. Peel garlic and dice very small.
  4. Heat chicken or beef broth and add the diced brown bread.
  5. Heat clarified butter in a large saucepan, sauté the onions and carrots, then add the garlic and diced meat and fry well.
  6. Add the tomato paste and paprika and lightly roast while stirring.
  7. Add thyme, marjoram and cumin and deglaze with half of the broth.
  8. Now simmer for about 190 minutes at a low level, pour over broth and stir.
  9. Put noodles (al dente) or potatoes in the last 30 minutes and cook.
  10. Only when the meat has softened, season with salt and pepper and simmer for another 10 minutes, then everything can be switched off.
  11. Goulash with the potatoes or pasta.
