Königsberger Klopse after great-grandmother's recipe

Forget the TK-Klopse or cans, the recipe is very simple and overall not more expensive than the finished product with flavor enhancers, preservatives and artificial flavors!

My great-grandmother has already prepared the meatballs, passed on the recipe to my grandmother and now it is already cooked and eaten in the 4th generation unchanged.

ingredients for 4 persons

  • 1 roll from the day before
  • 1/4 l of lukewarm water
  • 1 onion
  • 500 g minced meat mixed
  • 1 egg
  • 4 anchovy fillets
  • 1 pinch of grated nutmeg
  • 50 g butter
  • 40 g of flour
  • 750 ml of hot meat broth
  • 1/8 L white wine
  • salt
  • White pepper
  • 2 tablespoons capers
  • 1 teaspoon lemon juice
  • 4 tablespoons sour cream or crème fraîche
  • 1 egg yolk
  • 2 tablespoons of parsley

preparation

  1. Soak the bread roll in lukewarm water. Express, pick and place in a bowl with the minced meat. Peel the onion and dice, finely chop the anchovy fillets. Give everything to the minced meat.
  2. Then add the egg and season with salt, nutmeg and white pepper. Knead the mixture well and let it cover for 15 minutes.
  3. Melt the butter in a pot, dust the flour and fry until light yellow. Add the meat stock slowly and stir to a smooth sauce. Add capers, white wine and lemon juice and season with salt.
  4. Form meatballs about 4 cm in diameter, pour them into the sauce and let them stand for about 15 - 20 minutes in a mild heat.
  5. Serve Königsberger Klopse with boiled potatoes or mashed potatoes on four plates, sprinkle with parsley and serve immediately.
