In the spring between March and April there is again to buy wild garlic in the trade. Herbalists are especially drawn to the forest at this time to gather the healthy green.

Whether purchased or self-collected, it is advisable to double-check each sheet during washing to remove any foreign material before preparation.


The wild garlic is a wonderful wild vegetable and I like to use it as a spring cure. It can be prepared with him not only soup or spread, but also wild garlic spinach with a mild touch of garlic.

The ingredients for 2 people as main course are:

  • about 400 g fresh wild garlic
  • 1 small onion, diced
  • 4 tablespoons of creme fraiche
  • 4 tablespoons of plain flour for the binding

For the taste we need:

  • 1/2 cube of soup wort
  • a pinch of caraway, nutmeg and pepper, as well as salt to taste
  • and 2 tablespoons of vegetable oil to roast and 250 ml of water to infuse

For the mashed potatoes:


400 g of potato minced

preparation

  1. Cover the potatoes with water, salt and cook gently.
  2. Then empty the water away and stomp with about 200 ml of milk to mashed potatoes.
  3. Refine with a piece of butter and a pinch of nutmeg and salt.
  4. The wild garlic is first washed by stripping every single leaf. Possible weeds can also be detected more easily in this way.
  5. Then the wild garlic is roughly cut.
  6. The onion is roasted in vegetable oil and now comes the cut wild garlic.
  7. Add about 250 ml of water and let it simmer for 5 minutes.
  8. All now well with soup spice, cumin, nutmeg, salt and pepper to taste.
  9. Meanwhile, spoon 4 tablespoons of flour and 4 tablespoons of creme fraiche. This dough is then stirred into the vegetables and boiled for another 5 minutes.
  10. Mix the bound wild garlic to spinach with a hand blender.

Already the wild garlic spinach is ready and can be served with mashed potatoes.

PS: The main ingredient of this recipe can also be replaced by nettle leaves or spinach leaves.

Instead of crème fraiche, you can, for example, also use cream (sour cream) or even vegan cream (cuisine).
