Meatless vegetable patties

The recipe for these delicious, loose and meatless patties is very variable, because they are also good with other vegetables such. As mini-tomatoes, beans, mushrooms, etc. or with various herbs.

ingredients

For 12 patties:

  • 1 small carrot
  • ½ pepper
  • 1 onion
  • 1 clove of garlic
  • some broccoli florets
  • 1 tbsp vegetable maize and peas (canned)
  • about 100 g of mashed potatoes
  • 50g couscous
  • 80 ml of hot water
  • 1 egg
  • 1 tbsp breadcrumbs
  • Salt, pepper, caraway
  • chilli flakes
  • some nutmeg
  • 1 tsp mustard
  • some leaflets shrub basil
  • Rapeseed oil for frying

preparation

  1. Pour couscous in a bowl with the hot water and let it swell for about 5 minutes.
  2. Peel the carrots and cut into small cubes, clean the pepper and cut into small pieces, peel the onion and finely chop, dice the garlic clove very finely and cut the broccoli florets into small pieces.
  3. Heat the oil on a non-stick pan and sauté the minced vegetables in it for a short time, if necessary add a small amount of water. The vegetables should remain firm.
  4. Then corn and peas are added and everything mixed in a bowl with mashed potatoes and couscous. Now add 1 egg, 1 tbsp breadcrumbs and 1 tsp of mustard and season with salt, pepper, cumin, chilli flakes and a little nutmeg.
  5. Finally, add the finely cut shrub basil leaves.
  6. From the mass form small patties and roast on the pan in hot oil from both sides for four to five minutes until golden brown.
