North German potato salad

You need:

  • 1 kg of potatoes
  • 5 eggs
  • 1 medium onion
  • 1 cup of meat salad
  • 1 tomato
  • also: vinegar & oil, salt & pepper, mustard, lemon juice,
  • Sugar, a little parsley

preparation

Boil the potatoes to boiled potatoes and, when they are cooked, peel them off, slice them and place them in a large bowl along with the finely chopped onion. Add a little oil and vinegar and leave for a few minutes.

In the meantime, 4 eggs are hard boiled and then freed from the shell. Two eggs are cut into small cubes and lifted under the potato-onion mass. Now you just add the cup of meat salad. Next, make a mayonnaise: a raw egg, a little salt and pepper, a teaspoon of mustard, and a tablespoon of lemon juice in a narrow, high bowl, and mix well with the pestle. When pureeing, slowly add oil until a creamy mayonnaise has formed. Add this mayonnaise to the potato salad - and mix everything carefully.

Cut the two remaining eggs lengthwise and arrange the four halves around the salad. Quarter the tomato and arrange between the eggs. Chop parsley and sprinkle over the salad.
