Pesto from lettuce

A pesto can be made well from a head of lettuce or from a mixture of different salads.

ingredients

  • 1 head of salad or two small different mixed like Frisée or Romaine lettuce
  • a few drops of lemon
  • 2 tbsp olive oil
  • 50 g of grated almonds
  • Salt, pepper, a little sugar

preparation

  1. Wash and dry the salad well and grind it in a kitchen machine with olive oil into a nutmeg.
  2. I find chopped almonds in this pesto delicious, take about 50 grated almonds per head of salad.
  3. Season with salt, pepper and a little sugar and a few splashes of lemon juice.
  4. This pesto not only tastes good with pasta, but also very well, with boiled rice and fish and chicken sauce.
  5. After mixing, put in a screw-cap. Keeps fresh in the fridge for 5 days.
