Pork roulades with minced meat filling

This recipe is not mine. I got it from a friend and tried it myself yesterday. Tastes very delicious.

Ingredients for 4 persons.

4 bills
salt and pepper
4 tsp mustard
2 toes of garlic
1 egg
500g minced pork
Pork lard for frying
some flour for dusting
3 onions
1/4 liter dry red wine
1 teaspoon peppercorns
2 bay leaves
2 tablespoons flour
1/8 liter of sour cream
1 liter vegetable broth


Knock the schnitzel, season with salt and pepper. Mix 4 tablespoons of mustard and 1 clove of garlic and spread the schnitzel on one side. Mix the minced meat with egg, 2 chopped onions, salt and pepper and spread on the schnitzel. Roll the schnitzel tightly and fix with roulade needles and roll each roulade into some flour before frying.

Sauté the roulades in the hot pork lard. Remove the roulades from the pan and place in a casserole. Cut an onion into rings and fry in the same pan until golden brown and deglaze with the red wine. Then pour everything over the roulades including the liter of vegetable broth. Add a crushed garlic clove, 2 bay leaves and simmer for 1 hour over moderate heat. At the end of the cooking time comes the sour cream and the flour to thicken the sauce. Of course you can also take dark sauce binders. Then season the sauce with salt and pepper.

Spätzle, noodles or rice are suitable as a side dish. And a salad completes the whole thing.
