Potato and egg patties

I still had hard-boiled eggs from Easter. Always egg salad or something similar, I found something monotonous. It had to be something else. In a recipe book I found this great recipe. I would like to share this with you now.

ingredients for 4 persons

  • 600 g predominantly hard-boiling potatoes
  • 2-3 stalks of parsley
  • 4 hard-boiled eggs
  • 1 onion
  • 1 tbsp freshly chopped marjoram
  • 2 egg yolks
  • 2 tablespoons of potato starch or cornstarch
  • Salt, nutmeg
  • 2-3 tablespoons vegetable oil

preparation

  1. Wash the potatoes and cook for about 20 minutes (quick pot 8-10 minutes), peel while hot, squeeze through a potato press and let cool slightly.
  2. Wash parsley, shake dry, peel off the leaves and chop.
  3. Peel eggs and cut into small cubes.
  4. Peel and finely chop the onion, add to the potatoes with the parsley, marjoram, egg yolk and eggs.
  5. Add potato starch or cornstarch and season with salt and nutmeg.
  6. Put one tablespoon of small piles in a hot coated pan with the oil. Roast portion by portion golden brown on each side.
  7. If you want, you can garnish with marjoram.

Good Appetite!

The cooking time of the potatoes is included in the preparation time. But if you cook the potatoes in the pressure cooker then you only need about 25 minutes.
