"Real" carbonara

Here is the "real" carbonara recipe (without cream and son of clay):

- You sweat onions in a pan and add bacon cubes (alternatively Italian pancetta) into it. Just a little pepper, as the bacon is already salty enough.
- In the meantime, cook the noodles and add a spoonful of noodle water to the bacon sauce. Then rub about 2 handfuls of parmesan and whisk with 2 egg yolks.
- If the noodles are cooked and the water is tipped off, DO NOT scald with cold water but add the onion / bacon mixture to the pasta in the pot and stir well.
- Now put the Parmesan-Egg mixture under it and mix well.
- Served on the plate a little more Parmesan on top.
