September cookies - shortbread


Preparation time: 15 min.
Cooking or baking time: 10 min.
Total preparation time: 25 min.

September biscuits: These are butter biscuits for purists, because it consists of only three ingredients and a pinch of salt:


  • 150 g of flour
  • 100 g cold pieces of butter
  • 80 g of sugar
  • a good pinch of salt


  1. First crumble all ingredients and then knead into a dough dumpling.
  2. Form this into a roll or an elongated rectangle (depending on whether you later want round or square biscuits), wrap in foil and put in the fridge overnight.
  3. The next day with a sharp knife cut not too thin slices of it and bake at 180 degrees 10, maximum 15 minutes.
  4. Then carefully remove from the tin (the biscuits are hot very fragile) and put away to cool.

The dough is very friable when kneading at first, do not let it baffle you. Just knead on, at some point a nice piece of dough will come out of it.

In the refrigerator, the dough is then very firm, so you must bring it before necessarily in the desired shape.

The biscuits in my photo are so brown because I used spelled flour. They get lighter with white flour.
