These small sandwiches are traditionally served in England for afternoon tea, often accompanied by a selection of sweet pastries such as scones, crumpets, etc.

They are easy to do, but it is not enough to simply lay a few cucumber slices on a slice. They are lovingly mentioned in many English films and books (Oscar Wilde, The Importance of Being Earnest).

  • 2 cucumbers
  • 200 g soft butter
  • Salt, pepper, a little vinegar

  1. First, the cucumbers are peeled and cut into very thin slices. They come in a sieve, which lies over a bowl. Drizzle with a little vinegar, 1 tablespoon, and salt. Let stand for half an hour.
  2. In the meantime, with a bread knife the box white bread is debarked, i. All sides are cut thin with one cut so that the bread lies crustless and naked. You can also remove the crusts from the finished sandwiches afterwards, I find the first method easier.
  3. Now you cut the bread into thin slices, that goes very well with an electric knife, but also a normal bread knife does it, or a bread slicer. The thickness of the slices should be less than one cm if you can do that.
  4. Of course, you can also order a bread from the bakery and say that you need a one-day thinly cut, barked white bread.
  5. Now you have a nice stack of bread. The slices are laid side by side and brushed with butter.
  6. The cucumbers have their turn again: in the meantime, some water should have dripped off. You wash your hands, throw the cucumber slices on a tea towel and express very vigorously. The expressed slices now come on a dry cloth for dripping. And then you can start with the evidence.
  7. The cucumber slices are placed overlapping or like a roof tile on a slice buttered bread, puts a second slice on it. Cut these slices diagonally with a sharp knife to get 2 triangles.
  8. Continue working until the bread and cucumbers are used up. If cucumber is left over, it comes in the salad tomorrow, the bread also tastes with jam!
  9. The triangles are stacked on the platter and covered with foil until consumed so they do not dry out. When there was no film, you took an inverted bowl!
  10. You can increase the salt content, or take salted butter, but I like it best.
