ingredients

  • Approximately 1 kg of spelled flour and spelled meal (too little flour is not so good as the bread crumbles) 600/400 or 800/200 g
  • 2 cubes of yeast or dry yeast
  • 2 tablespoons oil (olive oil)
  • Salt and other spices as you like
  • Approximately 1 / 2- 3/4 L of warm water
  • 1 tsp honey
  • 80-100 g bulgur medium coarse
  • 80-100 g of barley grains

preparation

  1. If you want a nutty, hearty bread, it is enough to soak the barley grains and bulgur overnight. If you want a soft juicy bread, then you should cook them together for 10-15 minutes, let cool and add to the dough.
  2. I always stir in yeast with a little warm water and honey, then in the flour in a hollow empty, outside salt.
  3. Let stand for 10 minutes, then knead everything together, finally add the cooked grains. Also add oil to the dough.

Most of you know how to bake bread, I do it this way:

  1. Leave in a warm place for 40 minutes, covered.
  2. Dough should be a bit softer, so off in a mold.
  3. Let it go for another 20 minutes. Preheat oven 225 degrees.
  4. Brush the bread with water, pierce with a fork or with a knife and bake in the oven. 10 minutes in high heat, then down to 200 degrees then depending on the size.
