Susanne's great beef happiness with oven vegetables

This recipe I have from a friend who lives right next to the organic farmers and the cows can only watch in the meadow while grazing. No wonder that with a wonderful cook and great beef only something delicious can come out. It is one of the most cooked meat dishes of mine, which probably every visit has eaten at least once :-)

You need for 2 wolverines:

400 g of beef steak
1/2 bottle of red wine
1 good handful of raisins
1 good handful of olives (best green and black) without stone, rinsed and roughly chopped
4 toes of garlic, finely chopped
1 tablespoon of sugar
4 sprigs of rosemary
500 g potatoes
2 peppers
1 small zucchini
2 tbsp olive oil
1 tablespoon of peanut oil
salt and pepper

Cut the beef into large cubes and fry them in peanut oil on all sides. Add garlic and olives, fry for a short time and put everything in the wine. Add the raisins, 2 sprigs of rosemary and the sugar and allow to stew. Season with salt and pepper at the end of the cooking time.

From two sprigs of rosemary stiffen the needles. Wash and clean the peppers and zucchini and cut into pieces. Peel the potatoes and cut into 3mm wide slices. Mix potato slices and pieces of vegetables in a bowl with the olive oil, rosemary needles, salt and pepper.

Place on a baking sheet lined with baking paper and bake at 180 ° C for 30 to 40 minutes. Of course, with the vegetables you can vary, and I think that "Mediterranean" vegetables fit particularly well.

The meat is good when it is tender. That takes about 25 to 30 minutes. Of course you can serve it sooner, but I personally like it when the meat decays on the tongue. Oh well - the food tastes of course the remaining half bottle of red wine very delicious :-)

Enjoy the meal!
