The very best wholegrain bread with seeds

Last week, I baked this delicious crunchy spelled wholemeal bread with sunflower and pumpkin seeds, it's quite quick and easy to prepare and tastes great. I think that will be my favorite wholegrain bread now!

I would like to share the recipe with all friends of home-baked wholemeal bread! The preparation is very easy.


Ingredients for my 35 cm box shape

  • 1 cube of fresh yeast
  • 3 heaped tsp salt
  • 750 g spelled wholemeal flour
  • 1 pck of dry yeast
  • 750 ml buttermilk (room warm)
  • 1 tsp caraway (mortared)
  • 60 g sunflower seeds
  • 25 g pumpkin seeds

preparation

  1. First, the yeast is stirred with the salt until it is liquid (this is not a mistake, it is true)!
  2. Then mix the flour with the dried yeast and stir the flour mixture alternately with the room warm buttermilk - with the dough hook of a hand mixer - with the yeast mass until everything is well connected. There must be no dry flour left.
  3. Finally, mix in the sunflower and pumpkin seeds. The dough is pretty soft!
  4. Place the dough in the greased or baking paper-lined box and smooth the surface with a moistened spoon back, moistening the spoon over and over again.
  5. Now let the dough rest for about 20 to 30 minutes in a warm place.
  6. The oven is preheated to 200 degrees top and bottom heat, on the bottom of the oven you put a refractory container with water.
  7. After the rest period push the baking pan onto a rail at the bottom of the preheated oven. The bread has to be baked for about 70 to 90 minutes. About halfway through the baking time, I covered the mold with baking paper to keep the bread from getting too dark.

Tip: If you want to check if the bread is ready, take it out of the oven and out of the mold and knock on the bottom or sides of the bread - if it sounds hollow then the bread is ready! Otherwise it has to be baked for about 5 to 10 minutes.

After baking, a wonderful bread comes out of the oven with a delicious crusty crust, which, even if it has not yet cooled completely, is a treat with butter or lard!
