Vegan millet and potato balls

The millet dumplings of grandma are not only vegan, they also taste good. They are cold even delicious. Accordingly, they are also suitable for small children as a meal on the go.

ingredients

for about 6 people (about 60 dumplings)

  • 100 g of millet
  • 2 onions
  • about 300 ml vegetable broth
  • 600 g of potatoes
  • 6-7 tablespoons of flour
  • 1 bunch of smooth parsley chopped
  • breadcrumbs
  • Salt, pepper, nutmeg to taste

Peel the potatoes first and cook in salted water. While the potatoes are cooking, the peeled and finely chopped onions are soaked in a little oil and quenched with the vegetable broth. Add the millet and cook for about 12 to 15 minutes. The millet should be soft. If it is too pungent to try, pour some more stock or water and simmer.

If the millet is soft, put the pot aside and swirl the millet and allow to cool. Once the potatoes are cooked, drain, allow to cool slightly and then squeeze through a spaetzle press. Then chop the parsley and knead the millet with the mashed potatoes, flour, salt, pepper and some nutmeg. Form small balls from the dough and turn them into breadcrumbs. The dumplings are fried in the pan with a little oil.
