Vegetables a la Mediterranean

One of our favorite summer meals is: fresh fried vegetables. I make this dish in the roasting pan.

For the vegetables a la Mediterranean I need the following:

2 eggplants
2 - 3 potatoes
2 - 3 fresh tomatoes
2 - 3 green peppers
Cut 2 onions into rings
2 zucchinis
5 garlic cloves in thick slices
parsley
salt
pepper
olive oil
Peppers in powder, as desired
feta cheese


I cut the vegetables into finger-thick slices. I give it to a roasting pan. For this I give the chopped parsley and season everything. Now mix everything nicely with your hands.

Cover on the roasting pan and fry for one hour at 200 degrees. Then remove the lid and fry again for about 15-20 minutes until the vegetables remain only with the oil.

Serve with feta cheese as you like.
