Vegetarian bulgur stew with carrots and potatoes

This recipe is great for filling many hungry guests. It is cooked quickly and has a special taste with the addition of cardamon.

ingredients

  • Bunch carrots
  • 1 kg of potatoes
  • 250 g bulgur
  • 1 onions
  • 1 bunch of spring onions
  • 1 clove of garlic
  • vegetable stock
  • 6 cardamon capsules
  • Ground some pimento
  • 2 tablespoons curry
  • salt and pepper

preparation

  1. For six people, boil 250 g of bulgur in 500 ml vegetable stock and simmer for 10 to 10 minutes. The grains should be soft, if this is not the case, simmer for another five minutes and possibly add some more water.
  2. Set the pot aside. Peel and dice the potato and carrots.
  3. Peel and chop onions and spring onions, sauté in a saucepan with olive oil and add a chopped garlic clove.
  4. Then add the potatoes and carrots and sauté briefly.
  5. Open the cardamon capsules, grind the grains in the mortar, add the curry and allspice to the pot.
  6. Deglaze with a liter of vegetable stock and cook for 30 minutes.
  7. Add the bulgur and simmer for another 5 minutes.
