Victoria Sponge Cake

Ingredients:

- 3 medium sized eggs (room temperature)
- 50g sugar
- 50g unsalted butter
- 50g of flour
- 1 tbsp baking powder
- vanilla extract
- 300ml whipped cream
- 1 glass of strawberry jam
- Powdered sugar

Lay out a springform pan (24cm) with baking paper and grease the sides.


Stir butter with sugar until creamy, add eggs one at a time and mix, add flour and baking powder and add. Mix everything well, add a little vanilla extract.

Pour the dough into the mold and smooth.

Bake in preheated oven at approx. 150 degrees for 45 min. Then allow to cool slightly and carefully cut the cake horizontally into two halves.

Whip the cream with the powdered sugar.

Spread a cake half generously with jam, the other half with the whipped cream. Now reassemble both halves. At the end, dust the cake with powdered sugar.
