Apple rice pudding

For a 26cm springform or casserole dish:

First a rice pudding is cooked. For this, boil 1/2 liter of milk. Add 150g of rice pudding, 1 pinch of vanilla sugar and 2 tablespoons of sugar and allow the rice to simmer at low temperature with frequent stirring. That takes about 30 - 40 minutes. Allow the rice pudding to cool slightly.

Separate 3 eggs, beat the egg whites with a pinch of salt until stiff. Beat the egg yolks with 2 tablespoons of sugar until frothy. Add 250g quark (skimmed quark or 20%).


Then stir in the rice pudding. Now peel 4-5 apples and cut into small pieces. Then add them to the quark milk mix.

Finally, fold in the egg whites. Put the mass in a buttered dish and bake at 180 degrees for about 40 minutes with O / U heat.

Instead of apples you can also use pears or cherries.
