Bacon pancakes - nothing for bean counters

Everyone knows pancakes - bacon pancakes Many. But many do not know how easy something delicious comes on the plate. And that's why I want to explain my way:

ingredients

  • Milk - base for the pancakes - per person about 100 - 150 ml
  • Flour - please, take wheat flour type 550 - that's better. The amount I can not say exactly here, it results from the amount of pancakes in the text.
  • Eggs - about one per person.
  • Bacon. Good mixed. Per person 50 - 100 g - according to taste.
  • Onions. One small per person.
  • Salt pepper. The basic wort.
  • Some oil for baking, if the fat in the pan is not enough.

preparation

  1. Cut the bacon into small (!) Cubes. If the knife is dull, rather freeze the bacon slightly in the freezer, then it cuts easier. Slowly drain the bacon in a pan. Cut one onion (per person) into very thin half rings.
  2. Put milk in a bowl. Sprinkle in flour and stir with a blender or a whisk. About as much, until a supple, viscous dough arises. Egg inside. That's how I do it. The dough becomes looser when you separate the (or the eggs), the egg yolk so in the dough and the egg whites stiff and bounces. But you do not have to. Our pancake also tastes good with little effort.
  3. Now come salt and pepper. How much, that determines the salinity of the bacon, so rather less. Beat the dough well so that it is almost liquid. Then turn the onions. You can also pre-fry them, but if they are finely cut, they can also be raw in the dough. Then the now cooled bacon cubes. Without the fat. Leave it in the pan.
  4. Now the dough should rest for twenty minutes so that the flour can swell.
  5. After the rest period, the pan is reheated. About as high as you do with shavings, so not to the smoke point.
  6. In the hot fat comes now with a trowel a dough portion, so much that the pan bottom KNAPP is covered.
  7. Fry from one side until the edge of the pancake is brownish. The top of the pancake should not shine anymore. This is the time when the dough flat is turned. Please, not like on TV. Better take two spatulas. One up to hold, the other pushes you under it.
  8. Now fry for a few minutes, then the current bottom is ready. So you go with the rest of the dough until the bowl is empty.

Caution: This is just a small guide on how to do it. A basic recipe. You can also spinach leaves, grated cheese, herbs, chopped meat cubes (maybe from the last roast), you can also make quark in the dough, soften it with soda water, whatever you want.


As a side dish I would make a salad. Or, if time is not enough, add some ketchup (you can even do it yourself).
