Biscuit roulade della Nonna, without scales

For the biscuit roulade della Nonna, these ingredients are needed:

6 eggs separated
6 tbsp sugar
6 tablespoons flour

Beat sugar and yolk until foamy. Then add the beaten snow, spread the flour over it and fold in with the dough card.


Place on a baking sheet covered with baking paper, smooth and bake in a preheated oven at 160 degrees for about 10 - 15 minutes, rather light, as it is easier to roll.

Then place on a baking paper dusted with icing sugar, spread with jam and roll up. Sprinkle with icing sugar.

PS: If you want to add chocolate or nuts, simply reduce the flour content (eg 4 tablespoons flour + 2 tablespoons cocoa)
(maybe also vanilla sugar, grated lemon peel to refine the dough). Go fast and taste delicious!
