Cider Squares

Ingredients for 16 pieces

- 220g raisins
- 150ml dry french Cider or engl. Cider
- 100g butter or margarine
- 100g soft brown sugar
- 2 eggs
- 225g of flour
- 1 teaspoon Baking powder

Soak the raisins overnight in the cider.


Stir butter (or margarine) with the sugar until creamy, then stir in eggs. Sift the half of the flour and the baking powder and stir in the dough.

Now mix raisins with cider in the dough, then mix in the remaining flour.

In a rectangular shape (about 18 cm) smooth the dough.

Bake for about an hour at 180 degrees (or gas 4).

Allow to cool, tumble out of the mold and cut the cake into rectangles.
